Versatile Recipe

Since its vegan and gluten free, this Almond Oat Tart Crust is the perfect crust for a crowd with dietary needs. It’s one of those recipes that can satisfy any palette. It can be difficult to find a recipe that can make everyone happy. Often people feel like vegan food is missing something, this isn’t the case here. I’ve been told this crust tastes like a delicious almond cookie.

Uses for Almond Oat Crust

My favorite use of this crust is for Mini Berry Tarts with my Vegan Vanilla Pastry Cream. The toasty flavor of the almonds goes perfectly with the sweetness of the berries. Its the perfect substitute for regular tart crust. I have used it to make:

  • Tarts
  • Cheesecakes
  • Quiches
  • Cream pies
  • Fruit cobblers

Ingredients You’ll Need

  • Almond flour. I like the color and flavor of regular almond flour, however, it makes a much harder crust than a fine blanched almond flour. So if you want a nice soft crust then I recommend raw or blanched almond flour. If you can’t find almond flour in your area then simply take some whole almonds and grind them up finely in a food processor.
  • Oats. Again if you want a softer crust then I recommend grinding the oats with the almonds in a food processor.
  • Sugar, which can be omitted for a savory crust. Or substituted with brown sugar for a richer flavor.
  • Salt
  • Your favorite plant-based butter. I like to use a sunflower oil based vegan butter.

  • A rubber spatula or spoon
  • A food processor for a softer crust
  • A large bowl
  • 9 inch pie pan or 6 mini tart pans

Almond Oat Crust

Makes: 1 Pie or 6 Mini Tarts Prep Time: Cooking Time:
Nutrition facts: 200 calories 20 grams fat

Ingredients

150 g almond flour, blanched and finely ground

50 g oats, finely ground

60 g sugar

1/4 tsp salt

100 g vegan butter, melted

Instructions

  1. In a large bowl, combine 150 g almond flour, 50 g oats, 60 g sugar, and 1/4 tsp salt.
  2. Stir in 100 g melted vegan butter.
  3. Stir until the dough comes together and forms large crumbs. You will know its ready when you can press it against the side of the bowl and it doesn't fall apart.
  4. Turn out dough into a pie pan or divide evenly between 6 mini tart pans. Press dough firmly with your fingers into the bottom and work it up the side of the pan. 
  5. Use a glass or measuring cup to flatten the crust evenly into the pan. Prick bottom with a fork before baking.
  6. To bake unfilled, preheat oven to 165° C and bake until edges are golden brown. About 15 to 20 minutes, be sure to rotate pan halfway through baking.
  7. To bake a filled pie, pre-bake 10-12 minutes in 165° C oven before adding the filling. Be sure to cover the edges with foil and rotate halfway through baking to prevent over browning. 
  8. For a savory pie crust, omit the sugar and increase salt to 1/2 tsp.
